Crafting their pasta since 2019, Pastificio Carleschi uses traditional Italian methods to create an award-winning range of dried pasta made from heritage British Spelt, Emmer & Einkorn. Focusing on sustainability, artisanal methods and the nutritional benefits of their local natural ingredients, the founder of Pastificio Carleschi Gio packs his pasta full of goodness ready for you to celebrate in every bite!

Listen to any chef that lives and breathes the world of Italian cuisine and you’ll hear a passionate love affair with pasta, from the stories of the craft that goes into making each piece of pasta to the harmonious taste it has once cooked to al dente perfection! Having been thankfully introduced to the UK diet years ago, I’m glad to say we’re hook, line and sinker for the delicious taste, texture and tenure of cooking pasta. Pastificio Carleschi’s pasta range embodies this passion right here in the UK, giving us our own artisanal pasta that celebrates heritage British cereals we have in abundance.

For Gio his pasta journey all started with a desire to understand:

  1. Why does all dry pasta have to be made in Italy & shipped to the UK?
  2. Why do we not use the exceptional flour milled in the UK to make British pasta?

Thank the lord Gio asked these questions all the way back in 2008! Since then Gio has been honing his expertise and craftsmanship, building his pasta factory from the ground up to ensure each pasta that reaches our plate is delicious with every bite. Placing our heritage British cereals centre stage, Gio went out sourcing British flour millers and producers to find the perfect cereals to make his pasta range.

Once sourced Gio used, and still does today, a bronze die to extrude the pasta, then slow dries the pasta in wooden trays, called ‘looms’, at a low temperature to make sure all the wholegrain goodness and flavour is retained throughout the drying process. The end result means a plate full of delicious goodness for us, we couldn’t ask for more than that!  

Using Emmer, Spelt & Einkorn cereal grains, Pastifico Carleschi range includes an array of shaped pasta from spirals to shells to tubes that complement our choices of pasta sauces. However, it’s the delicious change in taste of the pasta that makes the range incredible, ranging from notes of hazelnut, walnut, almond, caramel, toffee and dark chocolate this pasta range has a lot of flavour meaning tastier pasta dishes all around!

Only thing left to say, is come celebrate the first artisan dry pasta made in the UK!!
